I had "leaky gut" from a small bowel yeast infection and part of the treatment is getting probiotics into the system and I have discovered fermented foods are far superior to buying expensive probiotics. I make my own kefir, (coconut milk kefir of late, I am vegan, it's yummy), and any juice can also be kefired. I also make kombucha and it's important to make most of it with the black tea, but almost anything can also be kombucha'd. Pineapple juice is particularly tasty this way. <br /><br />I do my own yogurt with soy milk too. I have pickled stuff in the past, need to get back to that. But the kombucha, kefir and yogurts do me nicely. I have the book that is featured in that article you posted and it is EXCELLENT. <br /><br />It is true, we once depended on LIVING foods, many of the cultured, and we do just eat overdone preserved crap. I have also made that revelac, ???? spelling with grains, this is easy too. It is not hard to do this stuff and the results are delicious. <br /><br />A healthy bowel is extremely important, it's 80% of immune system health and eating fermented foods is actually necessary for this. People would be ever so much better if they ate these foods. The natamycin now added to cheese screws it up. Avoid it. It kills the good molds in them. Where possible get raw cheeses, there is one company that still makes them, it's a major company and I can't remember the name, but it's in the pacific northwest.
